MOTHER'S DAY SPECIAL: AUSTRALIAN BEEF TENDERLOIN WITH BUSH TOMATO RELISH

Our recipe is designed with this special day in mind: a succulent beef tenderloin, known for its buttery texture and rich flavour, paired with a distinct bush tomato relish. Bush tomatoes, indigenous to the Australian desert, bring a sun-dried raisin-like taste with a tangy caramel undertone, making them the perfect complement to the beef.

INGREDIENTS:
2 beef tenderloin steaks (about 200g each) 2 tbsp olive oil
Salt and pepper, to taste

FOR THE BUSH TOMATO RELISH:
1/2 cup bush tomatoes, finely chopped
I small red onion, finely diced
2 cloves garlic, minced
2 tbsp balsamic vinegar
2 tbsp brown sugar
Salt, to taste
COOKING INSTRUCTIONS:
Prepping the Beef: Let the beef tenderloin steaks come to room temperature. Drizzle with olive oil, then season generously with salt and pepper.
Cooking the Beef: Preheat a pan over high heat. Once hot, sear the steaks for 3-4 minutes on each side for medium-rare, or adjust as per preference. Remove from heat and let them rest.
Bush Tomato Relish: In a saucepan over medium heat, sauté red onion and garlic until translucent. Add bush tomatoes balsamic vinegar, and brown sugar.
Simmer and Serve: Allow the mixture to simmer until it thickens into a relish consistency. Season with salt. Serve the rested tenderloin steaks with a generous dollop of the bush tomato relish.
