Your order window closes at 6pm Sunday for delivery that week. From there, our butchers here in Mudgee cut and break it down, our packing team vacuum-seals and packs it (everything except sausages, burgers and anything crumbed, which are packed but not vacuum-sealed), and it arrives fresh and chilled — never frozen — at your door on a set delivery window between Thursday and the following Monday, depending on where you live. That's not how most of the industry does it: have a look around and you'll find most online meat delivery in Australia, including Our Cow and ButcherCrowd, ships everything frozen. We're one of the few that don't.

We're Michael and Carolyn Emeny — 4th-generation farmers from Mudgee in the NSW Central Tablelands, and the founders of Mudgee Meat. We've packed and dispatched thousands of these boxes ourselves out of our own facility here in town, so we know exactly what happens to your order between the moment you hit "buy" and the moment it lands on your doorstep — and exactly why we've built the whole operation around never freezing it. The week your order travels through

Online meat delivery isn't instant, and knowing the actual timeline helps explain why — and why we run it the way we do, rather than just freezing everything and shipping on our own schedule:

  • Sunday, 6pm — orders close for that week's processing. Anything placed after this gets rolled into the following week automatically.
  • Sunday night — the moment the cutoff passes, Michael and Carolyn get to work. We go through what's been ordered and talk directly to our farmers and other suppliers to make sure everything needed to cover that week — cut for cut — is locked in and accounted for. Nothing gets ordered on spec; we order to match what you've actually bought.
  • Monday, 6am — our butchery team starts. Your order is broken down and cut by our butchers, then packed by our packing team (vacuum-sealed for everything except sausages, burgers and anything crumbed) in our purpose-built Mudgee facility. Most of our team has a farming background themselves, alongside qualified butchers and apprentices working toward full certification.
  • Wednesday — every order is triple-checked, then our first delivery run of the week leaves Mudgee for the big smoke, where our distribution partners take over from there to make sure your pack arrives promptly, fresh and cold.
  • Thursday — we run a second delivery leaving Mudgee, following the same route, for orders that didn't make Wednesday's run.
  • Thursday through the following Monday — your distribution partner completes the delivery, keeping it fresh and chilled — never frozen — the whole way, with the exact day depending on your location.
  • The day before delivery — you get an SMS with your delivery window and a tracking link, so you're not guessing.

Because we're only ever ordering and cutting to match that week's actual sales — not freezing large batches ahead of time to sit in storage — everything you get has come off the farm and through our butchery within days of reaching you, not weeks or months earlier.

Why fresh always beats frozen

This is the bit that actually matters once the box is in your kitchen. Freezing isn't a neutral step — it changes the meat:

  • Texture and juiciness. Ice crystals form inside the muscle fibres as meat freezes, and they rupture the cell walls. When it thaws, that damaged structure can't hold onto moisture the way it could fresh — that's the pool of red liquid ("drip loss") you see in the bag after defrosting a frozen steak. That's moisture and flavour that's gone before it even hits the pan. Meat that's never been frozen doesn't lose that structure, so it stays more tender and juicier when you cook it.
  • No thawing, no forward planning. Frozen delivery means you can't just decide on a Tuesday night to cook what's in the box — you need to have thawed it, usually 24-48 hours ahead in the fridge. Ours arrives fresh and chilled, ready to cook the day it lands, no planning required.
  • You choose what gets frozen, not us. Because our meat arrives fresh, your freezer stays exactly as full as you want it. Freeze what you won't use this week, keep the rest in the fridge — instead of everything landing frozen and taking up freezer space the moment it arrives, whether you need it yet or not.
  • One less freeze-thaw cycle, full stop. Every freeze-thaw cycle meat goes through costs it a bit more texture and moisture. Meat that arrives fresh has been through zero cycles by the time it reaches your kitchen — you're in full control of whether it ever goes through one at all.

We built our whole delivery model — Sunday cutoff, Monday butchery, Wednesday and Thursday delivery runs that keep everything fresh and chilled — specifically so we could promise this. It would genuinely be simpler and cheaper for us to freeze everything in bulk and ship on our own timeline, the way most of the industry does. We don't, because it's not the same product on your plate.

Where we deliver, and other ways to get your order

We deliver to over 90% of the Australian population, including every state except NT. If you live in an apartment, unit block or anywhere with specific access requirements, add instructions in the "special instructions" box at checkout and our distribution partner will follow them.

Prefer to skip delivery altogether? Our Mudgee facility is open to the public Monday to Wednesday 8am-5pm, Thursday 9am-4pm and Friday 9am-3pm, and you're welcome to buy straight from what's in our fridges. If you want a specific pack, you still need to order and pay online before the Sunday 6pm cutoff — message us for a code to waive the delivery fee, then collect from the facility after 11am the following Wednesday.

What it costs

Delivery is a flat fee based on where you live: $24.95 for NSW/ACT, $30.95 for QLD/VIC, $43.95 for SA, $49.95 for TAS, and $51.45 for WA (current as of writing — check at checkout, as these can move with fuel and freight costs). It covers packaging, labelling and transport.

We charge delivery this way — by location, rather than one flat number for everyone — because it's the fair approach: it costs us more to reach Perth or Hobart than Sydney, and we'd rather charge accordingly than have everyone pay the same inflated number to cover it. We also deliberately keep delivery as its own line item rather than folding it into the price of the meat, so what you pay for the meat itself stays some of the best value in the market.

If you order on Meat on Repeat, delivery is free for the life of the subscription — a saving of $25-$52 depending on where you live — and your price is locked for 12 months. You can skip, pause, reschedule, cancel or edit your subscription anytime.

If something's not quite right

We triple-check every order before it leaves us, but if something's missing or wrong when it arrives, contact us straight away and we'll make it right on your next order. When you do, send us a photo of your shipping docket — each one carries a unique stamp that tells us exactly which of our packers handled your order, so we can track down what happened and fix it fast. If your plans change before delivery, get in touch as early as possible — because we order stock from our farming partners specifically to match customer orders each week (we're not a supermarket sitting on shelf stock), cancellations closer to your delivery date can carry a cancellation fee.

How does meat stay cold during delivery without being frozen?
Our butchers cut every order and our packing team vacuum-seals it individually (sausages, burgers and anything crumbed are packed but not vacuum-sealed), places it in an insulated, fully recyclable carton, and transports it exclusively in refrigerated trucks from our facility to your door — arriving fresh and chilled, never frozen. The packaging holds a safe chill for around four hours if you're not home to receive it straight away.
