Drunken Ribs

INGREDIENTS:
FOR THE RIBS:
- 2 kg Baby Back Ribs
- 2 ½ tbsp garlic powder
- 1 ½ tbsp white pepper
- 1 ½ tbsp seasoned salt
- 1 tbsp onion salt
- 1 tsp dried oregano
- 125 ml distilled white vinegar
- 6 cans (330 ml each) premium lager (for marinating)
FOR THE DRUNKEN SAUCE:
- 6 cans (330 ml each) premium lager
- 1 bottle (600 ml) ketchup
- 1 bottle (300 ml) Worcestershire sauce
- 1 ½ cups maple syrup
- 1 cup brown sugar
- 1 cup liquid smoke flavoring
- 125 g margarine
- 125 ml apple cider vinegar
- 125 ml honey mustard
COOKING INSTRUCTIONS:
Marinate the Ribs: Mix garlic powder, white pepper, seasoned salt, onion salt, and oregano in a bowl. Rub the mixture evenly over the ribs, then place them in a large roasting pan. Pour in the distilled white vinegar and enough beer to cover the ribs. Marinate in the fridge for 8 hours or overnight.
Prepare the Grill: Preheat your BBQ grill to medium heat and oil the grate lightly.
Make the Drunken Sauce: In a large saucepan, whisk together the remaining beer, ketchup, Worcestershire sauce, maple syrup, brown sugar, liquid smoke, margarine, apple cider vinegar, and honey mustard. Bring to a boil, then simmer for 15 minutes until thickened.
Grill the Ribs: Remove the ribs from the marinade and generously coat them with the Drunken Sauce. Place the ribs on the grill and cook for 1 ½ to 2 hours, brushing with sauce frequently, until the internal temperature reaches 70°C.
