As the days grow longer and the weather warms up, it's time to embrace the freshness of spring. Our Grilled Spring Lamb with Asparagus is a celebration of this vibrant season. The succulent lamb, kissed by a zesty lemon-herb marinade, pairs beautifully with tender asparagus. creating a light and flavourful dish that perfectly suits the springtime mood.
4 lamb chops or cutlets
1 bunch fresh asparagus, trimmed
Zest and juice of 1 lemon
2 cloves garlic, minced
2 tbsp fresh rosemary, chopped
2 tbsp fresh thyme leaves
2 tbsp olive oil
Salt and pepper to taste
Preheat your BBQ grill to medium-high heat.
Prepping the Lamb: In a bowl, combine lemon zest, lemon juice, minced garlic, chopped rosemary. chopped thyme, olive oil, salt, and pepper to create the marinade.
Brush the lamb chops with the lemon-herb marinade and let them sit for at least 15 minutes, allowing the flavours to meld.
Place the marinated lamb chops on the grill and cook for about 3-4 minutes per side for medium-rare, or to your preferred level of doneness.
While the lamb is grilling, lightly brush the asparagus with the remaining marinade and grill them for 2-3 minutes, turning occasionally until they are tender and slightly charred.
Serve Hot: Serve the Grilled Spring Lamb alongside the lemony asparagus for a taste of spring on your plate.
