SAUSAGE AND VEGGIE SKEWERS WITH ZESTY CHIMICHURRI SAUCE

INGREDIENTS:
FOR THE SKEWERS:
6 sausages (your choice of flavour)
Assorted veggies (bell peppers, zucchini, onions, cherry tomatoes)
Olive oil
Salt and pepper to taste
FOR THE CHIMICHURRI SAUCE:
1 cup fresh parsley, chopped
1/4 cup fresh cilantro, chopped
4 cloves garlic. minced
2 tbsp red wine vinegar
1/2 cup olive oil
Salt and pepper to taste
COOKING INSTRUCTIONS:
For the Skewers: Preheat your BBQ grill to medium-high heat. Slice the sausages into bite-sized pieces. Thread the sausages and assorted veggies onto skewers.
Brush the skewers with olive oil and season with salt and pepper. Grill for about 8-10 minutes, turning occasionally, until the sausages are cooked through and the veggies are tender.
For the Chimichurri Sauce: In a bowl, combine chopped parsley, chopped cilantro, minced garlic, red wine vinegar, and olive oil. Season with salt and pepper.
Mix until well combined.
To Serve: Drizzle the zesty chimichurri sauce over the Sausage and Veggie Skewers. Serve hot, and enjoy this burst of flavours!
