VALENTINE'S DAY PRIME T-BONE STEAK WITH RED WINE REDUCTION

INGREDIENTS:

2 Black Angus Yearling T-Bone steaks,
about I-inch thick
Salt and pepper, to taste
2 tbsp olive oil

 

FOR THE RED WINE REDUCTION

1 cup good-quality red wine
2 cloves garlic, minced
1 sprig rosemary
1 sprig thyme
2 tbsp butter

COOKING INSTRUCTIONS:

Steak Prep: Take the steaks out of the refrigerator about 30 minutes prior to cooking. Season both sides generously with salt and pepper.

Red Wine Reduction: In a saucepan, combine red wine, minced garlic, rosemary and thyme. Simmer on low heat until the mixture is reduced by half. Strain the sauce to remove herbs and garlic. Return to heat and whisk in butter until the sauce is velvety and glossy. Season with salt and pepper. Keep warm.

Cooking the Steak: In a skillet, heat olive oil over medium-high heat. Once hot, place the steaks in the skillet. Cook for about 4-5 minutes on each side for medium-rare, adjusting the time based on your desired level of doneness.

Resting & Serving: Remove the steaks from the skillet and let them rest for 5 minutes. This ensures all the delicious juices are retained. Plate the steaks and drizzle with the red wine reduction.
