TRADITIONAL AUSSIE LAMB LEG ROAST WITH MINT SAUCE

INGREDIENTS:

1 whole lamb leg (about 2kg)
4 cloves garlic. sliced
2 tbsp olive oil
2 tbsp fresh rosemary, chopped
Salt and pepper, to taste

FOR THE MINT SAUCE:

1 cup fresh mint leaves, finely chopped
1/2 cup boiling water
3 tbsp white vinegar
1 tbsp sugar
Pinch of salt

COOKING INSTRUCTIONS:

Prepping the Lamb: Make small incisions all over the lamb leg using a sharp knife. Insert garlic slices into these incisions. This infuses the meat with a subtle garlic flavour.

Seasoning: Rub the entire lamb leg with olive oil. Sprinkle the chopped rosemary, salt, and pepper generously, ensuring the meat is well-coated

Roasting: Preheat the oven to 200°C. Place the lamb leg in a roasting pan and roast for about 1 hour and 30 minutes for medium-rare. Adjust the time based on your desired doneness.

Resting the Meat: Once roaste, remove the lamb from the oven and let
it rest for at least 15 minutes. This ensures all the juices are retained.

Mint Sauce: While the lamb is resting, combine the chopped mint leaves and boiling water in a bowl. Allow it to steep for 10 minutes. Stir in vinegar, sugar, and a pinch of salt. Mix well until the sugar dissolves.

Serving: Carve the lamb into thin slices and serve with a generous drizzling of the refreshing mint sauce.
