Beef Short Ribs
Beef short ribs are a flavourful, versatile cut of meat that lends itself to many slow cooking applications. I love smoking them. Some people trim the fat before smoking, but I leave it on. Season well and low and slow at around 95c until the internal temp gets to around 82c. I then pour some beef tallow over the top, wrap in butchers paper and finish them off in the oven or BBQ until they hit an internal temp of 96c. I unwrap them for 15mins to let the cooking process stop, then wrap them again in an old towel and put them in the esky for a few hours for them to drop temperature slowly and maintain moisture. Cut into three ribs, serve with some coleslaw or salad and you will not have a better meal.
